PUNKY’S BREAKFAST BURRITO

Ingredients

1 package of 4 Punky’s Soft Shells
12 slices of bacon
12 eggs, lightly beaten
Salt and pepper to taste
1 ½ cups shredded cheddar cheese
½ cup of thinly sliced red onion
½ cup of thinly sliced green onion
1 large tomato
Your favorite salsa

Directions

1. In a skillet, cook bacon until crisp; remove to paper towels. Drain, reserving 1-2 tablespoons of drippings. Add eggs, salt and pepper to drippings: cook and stir over medium heat until the eggs are completely set.

2. Place Punky’s Soft Shells in a skillet on medium to high heat. Do not add oil. Lightly brown each side for 1-2 minutes.

3. Spoon about ¼ cup of egg mixture down the center of each shell. Sprinkle with cheese, vegetables, and bacon. Fold bottom and sides of Punky’s Soft Shell over filling. Add favorite salsa and hot sauce. Serve Immediately.
